Turkey Sausage

2 pounds 99% fat free ground turkey
3/4 teaspoon ground ginger
1 1/2 teaspoons kosher salt
1 teaspoon dried sage
1/4 teaspoon cayenne pepper
1 1/2 teaspoons ground black pepper


  • Mix all ingredients well. You will probably have to use your hands, making sure that all the spices are distributed throughout the turkey.
  • Once its all mixed, form into 2 ounce patties (16 patties total)
  • In a preheated medium saute pan, spray zero calorie spray and place the patties in the pan. Do not overcrowd the pan.
  • Cook for about five minutes and flip and do the same. Continue this process until all patties are cooked.

Serving size: 2-8 oz sausage

Category 1. Once you have mixed the sausage, you can roll it into a log shape using plastic wrap, place it in the  freezer and store for up to two months or store in refrigerator up to seven days. You can also use this in recipes that call for ground sausage. Makes 2 lbs of sausage. *
